Prawn and pea pasta salad

Delightful prawn and pea pasta salad, great for picnics or quick weekday dinners.
Ingredients:
  • 250g angel hair pasta
  • 150g (1 cup) frozen peas
  • 500g peeled cooked prawns
  • 1 baby fennel, finely shaved, fronds reserved
  • 50g baby spinach
  • 125.00 ml small fresh mint leaves
  • 42.00 gm fresh lime juice
  • 60ml (1/4 cup) bought yoghurt, feta, dill dressing
  • 40.00 ml coarsely chopped fresh dill
  • Finely grated parmesan or pecorino, to serve
Instructions:
  • In a large saucepan, cook the pasta in boiling water according to packet instructions until al dente. Add the peas for the last 2 minutes of cooking. Drain and rinse pasta under cold water.
  • Combine the pasta, peas, prawns, fennel, spinach, and mint in a large bowl and mix well.
  • In a small jug or bowl, combine lime juice, dressing, and dill. Season generously. Pour the mixture over the pasta salad. Sprinkle with parmesan or pecorino and the reserved fennel fronds before serving.
