Prawn laksa

Ingredients:
  • 420g laksa kit
  • 4.60 gm olive oil
  • 312.50 gm water
  • 1 carrot, peeled, cut into short, thin sticks
  • 100g snow peas, shredded
  • 300g green prawns, peeled (tails intact), deveined
  • 40.00 ml beansprouts
  • 30.00 ml coriander leaves
Instructions:
  • Place the noodles from the kit in a heatproof bowl and cover them with boiling water. Let them stand for 5 minutes or until they are tender. Drain the noodles and rinse them under cold water. Set aside.
  • In a wok or frying pan over medium heat, heat oil and stir in the laksa paste sachets from the kit for 2 minutes. Pour in the coconut milk and water from the kit and simmer for an additional 2 minutes.
  • Add in the vibrant combination of carrots, snow peas, and succulent prawns. Let them simmer gently for 2 to 3 minutes, or until the vegetables and prawns reach the perfect level of tenderness.
  • Layer half of the noodles in a deep bowl and generously ladle half of the flavorful laksa sauce over the noodles, saving the rest for later enjoyment.
  • Garnish laksa with fresh bean sprouts and fragrant coriander. Serve hot.
