Try these quick and delicious pressure cooker chicken lettuce wraps for a cool and tasty meal or party appetizer.
Ingredients:
  • For the cooking liquid:
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine
  • 1 tablespoon oyster sauce
  • 1/4 cup water
  • For the chicken:
  • 2 tablespoons neutral cooking oil (I use avocado oil)
  • 1/2 small red onion, or two shallots, diced small
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, peeled and minced
  • 2 medium zucchini, diced small
  • 1 pound ground chicken or turkey
  • 1 (8-ounce) can sliced water chestnuts, drained and chopped
  • 1/2 teaspoon salt
  • To serve:
  • 8 whole leaves butter lettuce
  • 2 green onions, sliced thinly
  • 1/4 cup roasted unsalted peanuts, chopped coarsely
  • 1/2 cup chopped cilantro
Instructions:
  • Prepare the sauce by mixing soy sauce, rice wine, oyster sauce, and water in a small bowl. Set it aside.
  • Prepare the chicken mixture: Heat oil in your electric pressure cooker using the "Sauté" function. Sauté onion, garlic, and ginger for 2 minutes to mellow the garlic. Add zucchini, ground meat, water chestnuts, and 1/2 teaspoon of salt. Break up the meat with a wooden spoon, sauté for 3 minutes until it's mixed well with the veggies, even if not fully cooked.
  • Stir in soy sauce, oyster sauce, rice wine, and water. Seal the pot immediately and lock the lid to trap steam, enhancing flavors.
  • Pressure cook the chicken: Switch off the "Sauté" mode, choose the "Manual" setting for 10 minutes at high pressure. Ensure the pressure release valve is set to "sealing." Release pressure manually by switching to "venting" or allow it to release naturally.
  • To assemble the dish, gently spoon the flavorful chicken mixture into crisp lettuce cups. Garnish each cup with a sprinkling of fresh green onions, crunchy peanuts, and fragrant cilantro. Enjoy immediately.
