Pressure cooker kale stew with turkey bacon, onions, celery, and garlic: quick, easy, and tender side dish.
Ingredients:
  • 2 tablespoons olive oil
  • 6 ounces turkey bacon, diced
  • 1 onion, chopped
  • 3 celery ribs with leaves, chopped
  • 0.5 teaspoon red pepper flakes, or to taste
  • 4 cloves garlic, minced
  • 1 pound kale, cut into 1-inch pieces
  • 2 (16 ounce) cartons chicken broth
  • 2 tablespoons balsamic vinegar
  • 3 cubes chicken bouillon
  • 1 tablespoon white sugar
  • salt to taste
  • 1 dash hot pepper sauce, or to taste
Instructions:
  • In a pressure cooker, warm olive oil over medium heat. Add turkey bacon, onion, celery, and red pepper flakes. Sauté until turkey bacon is browned and onion is translucent, approximately 8 minutes. Mix in garlic and cook until aromatic, around 3 minutes. Gradually add kale and cook until just wilted, about 1 minute. Stir in chicken broth, balsamic vinegar, bouillon cubes, sugar, and pepper.
  • Pressure cook kale for about 10 minutes following the manufacturer's instructions. Allow pressure to release naturally, carefully open the lid, and stir in salt and hot pepper sauce.
