Create a stunning Christmas dessert with a festive profiterole centerpiece.
Ingredients:
  • 500ml Premium Vanilla Custard
  • 36 bought profiteroles (see note)
  • 400ml water
  • 675.00 gm sugar
  • Silver cachous
Instructions:
  • Transfer the custard into a piping bag with a 1cm nozzle and fill the profiteroles. Heat and dissolve sugar in water over medium heat. Let it cook until light golden without stirring for 8-10 minutes. Create a toffee by dipping the bases of the profiteroles with a fork. Add silver cachous on top. Assemble the profiteroles in a wreath shape on a platter in 2 layers. Create toffee strands by using 2 forks and pull apart over the wreath. Place a candle in the center and serve.
