Prosciutto & ricotta tarts with prawns

Deliciously flavorful prawn, prosciutto, and ricotta canapes for any elegant soirée.
Ingredients:
  • 16 slices prosciutto
  • 800g fresh ricotta
  • 40.00 ml chopped fresh dill
  • 3 tsp finely grated lemon rind
  • 16 cooked prawns, peeled leaving tails intact, deveined
  • Fresh dill sprigs, extra, to serve
Instructions:
  • Preheat oven to 200°C and elegantly wrap each of the sixteen 125ml (1/2-cup) muffin pans with slices of savory prosciutto.
  • In a bowl, mix ricotta, dill, and lemon rind until smooth, then season with pepper. Fill the prosciutto cases with the ricotta mixture, gently pressing down. Bake for 20 minutes until the prosciutto is crisp. Allow it to cool completely before serving.
  • Garnish each tart with a prawn and fresh dill sprigs.
