Prepare turkey ahead for a stress-free holiday meal.
Ingredients:
  • 40.00 ml chopped fresh rosemary
  • 3 tsp finely grated lemon rind
  • 60ml (1/4 cup) extra virgin olive oil
  • Salt & ground white pepper
  • 2 x 1.5kg turkey breast fillets, skin removed
  • 2 x 100g pkts sliced prosciutto
  • 30g butter
  • Pan juices from the roast turkey
  • 20.00 ml plain flour
  • 250ml (1 cup) dry red wine
  • 500ml (2 cups) chicken style liquid stock
  • 100g (1/3 cup) jellied cranberry sauce
Instructions:
  • In a bowl, mix together rosemary, lemon rind, and 1 tablespoon of oil. Season with salt and pepper. Rub this flavorful mixture over the turkey breasts. Layer the prosciutto slices slightly overlapping each other on top of each turkey breast. Secure with kitchen string tied at 2cm intervals. Transfer to a large glass dish, cover with plastic wrap, and refrigerate for 1 1/2 hours to enhance the flavors.
  • Preheat the oven to 200C. In a large frying pan over medium-high heat, melt the butter and remaining oil until foaming. Add the turkey and cook for 5 minutes, turning occasionally, until golden brown all over. Then, transfer the turkey to a large roasting pan.
  • Roast the turkey in a preheated oven for 55 minutes, or until the juices run clear when pierced with a skewer at the thickest part. Transfer to a carving tray, cover loosely with foil, and let it rest for 20 minutes.
  • To prepare the cranberry gravy, heat the roasting pan with the pan juices over high heat. Stir in the flour and cook until bubbly, about 1 minute. Slowly pour in the wine and deglaze the pan with a wooden spoon. Let it boil for 5 minutes. Pour in the stock, bring to a boil, and simmer for 5 minutes until thickened. Finally, mix in the cranberry sauce and cook until the gravy is thick and smooth, about 10 minutes.
  • Slice the turkey thinly and arrange on plates. Drizzle with savory gravy and serve promptly.
