Boozy prune brownies with soaked fruit for extra flavor!
Ingredients:
  • 50 ml Armagnac
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • ½ tsp ground nutmeg
  • 1 pinch of ground cloves
  • 1 orange
  • 130 g semi-dried prunes
  • 250 g quality dark chocolate (70%)
  • 200 g salted butter
  • 5 free-range eggs
  • 100 g caster sugar
  • 75 g plain flour
  • 75 g ground almonds
  • cocoa powder for dusting
Instructions:
  • Prepare the Armagnac mixture by boiling Armagnac, spices, and orange zest in a pan. Pour this mixture over prunes in a bowl, cover, and refrigerate. When ready to bake, line a 20cm cake tin and preheat oven to 180°C/350°F/gas 4. Melt chocolate with butter over simmering water. Whip egg whites with sugar until stiff peaks form. Whisk yolks and sugar until thick, then mix in melted chocolate. Blend prunes and fold into the mixture. Combine flour and almonds, then fold into chocolate mixture. Gently fold in egg whites in three stages. Pour mixture into tin and bake for about 1 hour. Cool, then dust with cocoa powder before serving with Armagnac-soaked prunes.
