Pukka pineapple with bashed-up mint sugar

Delicious pineapple mint combo, perfect for kids!
Ingredients:
  • 1 ripe pineapple
  • natural yoghurt to serve, optional
  • 2 tablespoons caster sugar
  • 1 handful fresh mint
Instructions:
  • Choose a ripe pineapple that smells sweet and has easily removable leaves. Trim both ends, peel the skin, and remove any black bits. Cut the pineapple into quarters, discard the core, and thinly slice lengthwise. Arrange the slices on a plate. Bring the plate to the table with yogurt for serving, then return with a mortar, pestle, and sugar. Muddle mint leaves with sugar in the mortar until fragrant. Sprinkle the mint sugar over the pineapple slices. Enjoy this delightful dish as a refreshing dessert.
