Overnight muesli bircher: prep ahead for a delicious breakfast.
Ingredients:
5 cm piece of ginger
8large handfuls of rolled porridge oats
2large handfuls of ground bran
1handful of desiccated coconut
5handfuls of dried fruit such as banana, apricots, pineapple, mango, papaya, kiwi
1½-2 litres milk
500 g natural yoghurt
Instructions:
Finely grate the ginger into a large bowl, then add all ingredients, making sure to chop any larger pieces of fruit first. Mix everything well to combine. Cover and refrigerate overnight to allow the flavors to meld. When ready to serve, top with fresh fruit, such as sliced banana, grapes, and finely grated lime zest. Any leftovers can be stored in the fridge for up to 4 days. Enjoy!
