Delicious muffins filled with pumpkin, spinach, and feta - a tasty way to add more veggies to your diet!
Ingredients:
  • 150g self-raising flour
  • 160g self-raising flour
  • 500.00 ml coarsely grated pumpkin
  • 60g baby spinach leaves, finely shredded
  • 100g fetta, coarsely crumbled
  • 1 Free Range Egg, lightly whisked
  • 80g butter, melted
  • 250ml buttermilk
  • 40.00 ml pepitas (pumpkin seeds)
  • 2 tsp chia seeds
Instructions:
  • First, preheat your oven to 180C. Then, line a 12-hole muffin pan with paper cases that hold 1/3 cup (80ml) each. In a large bowl, mix together the flour, pumpkin, spinach, and feta until well combined.
  • In a small bowl, gently whisk together the egg, butter, and buttermilk. Pour the mixture into the flour and stir until just combined, being careful not to overmix.
  • Evenly distribute the mixture into the muffin pans, then sprinkle pepitas and chia seeds on top.
  • Bake for 20-25 minutes or until a skewer inserted in the centers comes out clean. Transfer to a wire rack to cool slightly. Enjoy the muffins warm or at room temperature.
