Pumpkin and bacon quiche with easy pastry

Delicious pumpkin and bacon quiche with easy homemade pastry - a comforting family favorite for any meal.
Ingredients:
  • 400g butternut pumpkin, peeled, cut into 2cm pieces
  • 13.80 gm extra virgin olive oil
  • 100g bacon, chopped
  • 225ml pouring cream
  • 55g (1/2 cup) coarsely grated gruyere
  • Micro herbs, to serve (optional)
  • 200g (1 1/4 cups) white spelt flour
  • 80g (1/2 cup) wholemeal spelt flour
  • 1.20 gm sea salt
  • 80ml (1/3 cup) light extra virgin olive oil
  • 75ml chilled water
Instructions:
  • Preheat your oven to 200C (180C fan forced) and line a baking tray with parchment paper.
  • Prepare the pastry by combining the flours and salt in a large bowl, making a well in the center. In a separate container, whisk together oil, water, and egg. Pour this mixture into the well and stir until combined. Transfer the dough to a lightly floured surface and knead until smooth. Roll out the dough into a 4mm-thick disc and line a 24cm round fluted tart tin with removable base, trimming any excess dough. Prick the pastry with a fork and chill in the freezer for 30 minutes.
  • Place the pumpkin on a prepared tray and drizzle with 2 teaspoons of oil. Season with your favorite spices. Roast the pumpkin, stirring halfway through, until golden and tender, about 30 minutes. Allow it to cool before using.
  • Heat the rest of the oil in a non-stick pan over medium heat. Sauté the bacon, stirring occasionally, until golden and crispy, about 4 minutes.
  • Combine eggs, cream, and fresh chives in a jug, whisk until smooth, then season to taste.
  • Prepare the pastry case by lining it with baking paper and filling it with pastry weights or rice. Bake for 15 minutes, then remove the paper and weights or rice. Continue baking for another 12 minutes until golden brown. Allow it to cool before using.
  • Preheat the oven to 170C/150C fan forced. Arrange the pumpkin and bacon on the pastry case. Sprinkle with cheese and pour over the egg mixture. Bake for 30-35 minutes until just set. Let it cool slightly before serving, and garnish with micro herbs, if desired.
