Vegetarian-friendly, cozy pumpkin and eggplant curry.
Ingredients:
  • 18.40 gm oil
  • 1 red onion, chopped
  • 500.00 ml pumpkin, cubed
  • 1 large eggplant, cubed
  • 175.00 gm rogan josh curry paste
  • 510.00 gm vegetable stock or water
  • 44.40 gm tomato paste
  • 400g can diced tomatoes
  • 400g can chickpeas, drained, rinsed
  • 62.50 ml coriander, chopped
  • Rice, to serve
  • Coriander sprigs, to serve
  • Pappadums, to serve
Instructions:
  • In a large saucepan over high heat, heat oil. Sauté onion and garlic until onion is tender, about 2-3 minutes. Add pumpkin and eggplant. Stir in curry paste and cook for 30 seconds. Mix in stock or water and tomato paste. Bring to a boil over high heat.
  • Simmer over low heat for 15-20 mins until the pumpkin is tender, then gently fold in the diced tomatoes, chickpeas, and fresh coriander.
  • Garnish with fresh coriander sprigs and serve with rice and crispy pappadums.
