Cozy up with a hearty vegetarian pumpkin and lentil stew.
Ingredients:
  • 250.00 ml red lentils, rinsed in cold water
  • 6-8 dried curry leaves*
  • 18.40 gm vegetable oil
  • 1 small onion, finely chopped
  • 2 tsp grated ginger
  • 2.50 gm ground cumin
  • 1 tsp ground turmeric
  • 2.50 gm ground paprika
  • 500.00 ml diced pumpkin
  • 2 celery stalks, chopped
  • 100g green beans, cut into 2cm lengths
  • 42.00 gm lime juice
  • 40.00 ml chopped coriander
  • Steamed white rice, to serve
  • Plain yoghurt, to serve
Instructions:
  • In a saucepan, combine rinsed lentils, fragrant curry leaves, and 3 cups of cold water (750ml). Bring to a gentle boil, then lower the heat and simmer for 10 minutes.
  • 1. In a large frypan over medium heat, sauté onions until soft, then add garlic, ginger, and spices for 1 minute. 2. Add pumpkin and celery and cook, stirring often, for 3-4 minutes until vegetables are tender.
  • Combine the pumpkin mixture with the lentils and simmer, covered, for 10 minutes. Mix in the beans and continue cooking for 5 minutes. Season with salt and pepper before adding the juice and coriander.
  • Enjoy alongside a bed of fluffy rice, topped with a generous dollop of creamy yogurt.
