Irresistible pumpkin butterscotch oatmeal cookies - a must-have fall indulgence loved by all!
Ingredients:
  • 1 cup butter-flavored shortening (such as Crisco®)
  • 0.75 cup pumpkin puree
  • 0.5 cup white sugar
  • 1.5 cups all-purpose flour
  • 2.5 cups old-fashioned oats
  • 1 cup butterscotch chips
Instructions:
  • Preheat the oven to 350°F (175°C) to get it nice and hot for cooking.
  • Cream together shortening, brown sugar, pumpkin puree, and white sugar until smooth; then mix in eggs and vanilla extract until well incorporated.
  • In a bowl, whisk together flour, baking soda, and cinnamon. Gradually mix the flour mixture into the pumpkin mixture until well combined, then gently fold in oats. Stir in butterscotch chips until evenly distributed. Drop spoonfuls of dough 2 inches apart on a baking sheet.
  • Bake until golden brown, about 8-10 minutes in the preheated oven.
