Pumpkin Caramel Cake Mix Cookies

Indulge in the flavors of fall with these easy and delicious pumpkin cake mix cookies. Topped with caramel drizzle and chopped nuts for extra flavor and crunch.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 1/3 cup canned pumpkin (not pumpkin pie mix)
  • 1 egg
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 tablespoon pumpkin pie spice
  • 6 oz (from 8-oz package) cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon pumpkin pie spice
  • Caramel sauce
  • Chopped walnuts
Instructions:
  • Preheat oven to 350°F.
  • In a large bowl, use an electric mixer on medium speed to blend together 8 ounces of cream cheese, 1/2 cup of softened butter, and pumpkin until smooth (about 1 minute). Scrape the sides of the bowl. Mix in the egg until smooth, then add the cake mix and 1 tablespoon of pumpkin pie spice on low speed until well blended.
  • Spoon dough in rounded tablespoonfuls onto ungreased cookie sheets, spacing them 2 inches apart.
  • Bake for 13-15 minutes until edges turn a light golden brown. Remove from oven, then shape with a round cookie cutter for perfectly round cookies.
  • Allow the cookies to cool on the baking sheet for 2 minutes, then transfer them to a cooling rack. Let the cookies cool completely for about 20 minutes.
  • In a medium bowl, mix the Frosting ingredients until smooth. Spread approximately 2 teaspoons of frosting on each cookie.
  • Drizzle caramel sauce on top and sprinkle with chopped walnuts.
  • Refrigerate the dish with a covered lid and savor at any time!
