Indulgent pumpkin pie cheesecake bars with a delightful spiced streusel topping, ideal for gatherings and get-togethers.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup blanched almond flour
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 pinch ground cinnamon, or to taste
  • 1 cup butter, cubed
  • 1 egg
  • 1 (15 ounce) can pumpkin puree
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon all-purpose flour
Instructions:
  • First, preheat your oven to a toasty 400 degrees F (200 degrees C), then generously grease a 9x12-inch baking pan.
  • Combine flour, almond flour, brown sugar, baking powder, salt, and cinnamon in a large bowl. Blend in butter until fully mixed. Add egg and stir until a dough forms. Press half of the dough into the pan, saving the rest for the streusel topping.
  • Using an electric mixer, blend together pumpkin and cream cheese until smooth. Add eggs and vanilla extract, mixing until fully incorporated. Pour the mixture over the crust.
  • Bake in the oven until the top is golden and the center is set, approximately 15 minutes.
  • In a bowl, crumble reserved dough with flour and cinnamon until mixed. Lower oven temperature to 350°F (175°C). Sprinkle topping over pumpkin filling on bars.
  • Bake for 30-40 minutes until a toothpick comes out clean. Allow it to cool for at least 15 minutes, then refrigerate for at least 2 hours. Cut into bars and enjoy!
