Pumpkin curry with chickpeas, silverbeet and almonds

Whip up a tasty pumpkin curry with chickpeas, silverbeet, and almonds for a flavorful family meal.
Ingredients:
  • 1000.00 ml of 2.5cm cubed, seeded, peeled Kent pumpkin (about 500g)
  • 1 medium brown onion, cut into medium dice
  • 3 cloves garlic, crushed
  • 20.00 gm Keens Traditional Curry Powder
  • 2.50 gm Brand Ground Cinnamon
  • 40.00 ml Cornwell's Apple Cider Vinegar
  • 400ml can Coconut Milk
  • 400g can Brand Chickpeas, drained
  • 191.25 gm Real Vegetable Stock
  • 62.50 gm water
  • 1/4 bunch silverbeet (about 150g), stems removed, thickly shredded
  • 62.50 ml Flaked Almonds, toasted
  • 1 lime, cut into wedges
  • 750.00 gm water
  • 300.00 gm Brand Long-Grain White Rice
  • 2.40 gm salt
Instructions:
  • Start by heating a large heavy-based saucepan over medium-high heat. Add oil and heat it for about 1 minute. Introduce pumpkin and onion and cook for 5 minutes until the onion is translucent and the vegetables start to caramelize. Add garlic and cook, stirring constantly, for 1 minute until fragrant.
  • Sprinkle in the curry powder and cinnamon, cook while stirring for 1 1/2 minutes. Pour in the vinegar and stir to deglaze the pan. Add coconut milk, chickpeas, stock, and water. Bring to a simmer, then lower the heat and simmer gently for 30 minutes or until pumpkin is tender and the liquid slightly thickens. Gently mix in silverbeet and let simmer for 5 minutes until wilted. Season with salt to taste.
  • While waiting for the rice to cook perfectly, simply bring the water to a boil in a medium heavy-based saucepan. Stir in the rice and salt. Cover, reduce heat to medium-low, and let it gently simmer for 20 mins until the rice is tender and the liquid is absorbed. Take the pan off the heat, leave it covered for an additional 10 mins. Fluff the rice with a fork.
  • Serve the flavorful curry alongside fluffy white rice. Top with crunchy almonds and a squeeze of fresh lime for a delightful finishing touch.
