Pumpkin gnocchi with blue cheese

Delicious pesto gnocchi with melted blue cheese, perfect for a quick and satisfying meal for one or two people.
Ingredients:
  • 50g baby spinach
  • 18.40 gm walnuts
  • 20g parmesan
  • 1 garlic clove, roughly chopped
  • 80ml olive oil
  • 2 x 500g pkt pumpkin or potato gnocchi
  • 80g Dairy roaring forties blue cheese, crumbled
  • Freshly ground pepper
  • Lemon wedges, to serve
Instructions:
  • Combine fresh spinach, crunchy walnuts, savory Parmesan, pungent garlic, and flavorful olive oil in a food processor and blend until creamy.
  • Boil gnocchi in a large saucepan until it floats to the surface, about 3 minutes. Drain and return to the pan.
  • Mix the pesto with the gnocchi until well coated. Portion into serving dishes. Sprinkle with blue cheese and pepper. Accompany with lemon wedges for serving.
