Creamy pumpkin sauce with warm spices tossed with whole wheat pasta and Parmesan cheese - a quick and delicious kid-friendly meal ready in 30 minutes.
Ingredients:
  • 6 ounces whole wheat penne pasta
  • 0.75 cup pumpkin puree
  • 0.75 cup low sodium chicken broth
  • 0.25 cup nonfat milk
  • 1 teaspoon margarine
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger
  • 0.25 cup grated Parmesan cheese, plus more for serving
Instructions:
  • Fill a large pot with salted water and bring it to a vigorous boil. Add penne and cook until al dente, stirring occasionally, for about 11 minutes. Drain the pasta in a colander in the sink.
  • In a large skillet over low heat, gently warm the pumpkin puree, chicken broth, milk, margarine, onion powder, black pepper, salt, cloves, nutmeg, cinnamon, and ginger for about 5 minutes. Add the drained pasta and blend in Parmesan cheese before serving.
