Delicious pumpkin pie-inspired cookie bars made with sugar cookie mix, pudding, and pumpkin spice. Topped with vanilla frosting to mimic a pumpkin pie. Perfect for fall gatherings!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Butter and egg called for on cookie mix pouch for Drop Cookies
  • 1 box (3.4 oz) Jell-O™ vanilla-flavor instant pudding & pie filling mix
  • 2 teaspoons pumpkin pie spice
  • 2 1/3 cups from 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 teaspoon Betty Crocker™ orange gel food color
  • 1 teaspoon unsweetened baking cocoa
Instructions:
  • Preheat oven to 350°F. Line a 13x9-inch pan with foil, making sure the foil overhangs on two opposite sides of the pan, and generously coat with cooking spray.
  • Combine cookie mix, softened butter, egg, dry pudding mix, and pumpkin pie spice in a large bowl. Use a spoon or your hands to mix until a dough forms, then press the dough into the bottom of the pan.
  • Bake until beautifully golden brown, for 16 to 20 minutes. Let it cool perfectly on a rack for about 1 hour before enjoying.
  • Gently lift the foil to release the bars from the pan and carefully peel the foil away. Cut the bars into 27 triangles by first making 3 horizontal rows, then slicing each row into 9 triangles with a 2-inch base width. Save the end pieces for snacking.
  • Place 1 1/4 cups of frosting in a small microwavable bowl. Mix in orange food color and 1/4 teaspoon of cocoa until well blended. Transfer 1/2 cup of the orange-tinted frosting to a decorating bag with a small round piping tip. Pipe a border on the outer edge of each triangle and allow it to set for 15 minutes.
  • Heat the leftover orange-tinted frosting in the microwave on High for 10 to 30 seconds until it is thin enough to pour over the triangles. Spoon about 1 teaspoon of the warmed frosting onto the center of each triangle, and gently spread it with the back of a measuring teaspoon to coat the top. Repeat for all triangles. Reheat the frosting in the microwave if it thickens too much. Allow the glaze to set for 10 minutes before serving.
  • Place 3/4 cup frosting in a separate bowl and mix in the remaining 3/4 teaspoon of cocoa until well combined. Transfer the cocoa frosting into a decorating bag with a small star piping tip and pipe 5 to 6 small stars at the short edge of each triangle.
  • Clean the star piping tip from the previous step and insert it into a fresh decorating bag. Fill the decorating bag with the remaining 1/3 cup of vanilla frosting. Pipe small rosettes in the center of each bar following the photo as a guide.
  • Place the food in a single layer inside an airtight container and store it at room temperature.
