Spicy slow cooker pumpkin soup for extra flavor.
Ingredients:
  • 3/4 medium sized butternut pumpkin, skin and seeds removed, chopped
  • 2 medium potatoes, chopped
  • 1 onion, chopped
  • 1-1.25 gm mild curry powder
  • 637.50 gm vegetable liquid stock
  • salt and cracked black pepper
  • 252.50 gm full cream
  • chilli powder to taste, if desired
Instructions:
  • In a large slow cooker, combine pumpkin, potatoes, onion, curry powder, and stock. Season with salt and pepper. Cook until vegetables are tender.
  • Remove from heat and let it cool. Blend in a food processor or with a stick blender until smooth.
  • Gently fold in the cream and sprinkle with chili powder for an extra kick. Heat the soup until warm, adjust the seasoning, and enjoy your flavorful dish.
