Roast pumpkin with sweet honey and crunchy nuts.
Ingredients:
  • 57.20 gm honey
  • 700g kent pumpkin, peeled, seeded, into 6 wedges each
  • 700g jarradine pumpkin, peeled, seeded, into 6 wedges each.
  • Olive oil spray
  • 100g butter
  • 150g mixed nuts
Instructions:
  • Preheat your oven to 180ºC for the perfect cooking temperature.
  • Spread the pumpkin in a non-stick baking dish. Give it a quick spritz of olive oil spray and a generous seasoning of salt and pepper. Bake until the pumpkin begins to soften, about 35 minutes.
  • Combine room temperature butter, honey, and chopped deluxe nut assortment in a bowl using a wooden spoon until mixed. Spoon mixture over the pumpkin.
  • Bake for 15 minutes until the pumpkin is tender and the nuts are golden.
