Cozy up with a hearty split black lentil stew for ultimate winter comfort.
Ingredients:
  • 1 cup skin-on, split black lentils (urad dal)
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 4 green chile peppers, cut into large chunks
  • 1 tablespoon minced fresh ginger root
  • 1 cup water
  • 1 large tomato, chopped
  • 1 teaspoon garam masala
  • 0.5 teaspoon ground turmeric
  • 0.25 cup chopped fresh cilantro
Instructions:
  • In a large container, submerge the lentils in cool water, ensuring a few inches of water above them. Let soak for 4 hours to overnight. Drain and rinse thoroughly.
  • In a heavy-bottomed saucepan over medium heat, sauté onion, green chile peppers, garlic, and ginger in oil until onions are golden brown, about 5 minutes. Add lentils, 1 cup water, and salt; simmer on low for 30 minutes until lentils are tender. Stir in tomato, garam masala, and turmeric; cook for an additional 10 minutes. Serve garnished with cilantro.
