Ingredients:
  • 50g (1 cup) dried quandong
  • 1 orange, roughly chopped
  • 370g (1 2/3 cups) raw sugar
  • 180g unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • 350g (2 1/3 cups) self-raising flour
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 200C/180˚C fan-forced and grease a 20cm round cake pan to prepare it.
  • Combine fresh quandong, juicy orange, raw sugar, and butter in a food processor. Process until the quandong is finely chopped and the mixture is well combined.
  • Add the eggs one by one, ensuring each one is fully incorporated before adding the next. Don't worry if the mixture looks separated; it will come together later. Transfer the mixture to a large bowl and gently fold in the sifted flour until just combined.
  • Transfer the mixture into the pan and bake in the middle of the oven for 50 minutes, or until a skewer inserted in the center of the cake emerges clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to fully cool. Dust with powdered sugar and serve.
