Prepare a delicious homemade quiche with pre-rolled pastry; easily double the ingredients to have an extra case ready for your next picnic.
Ingredients:
  • 250 g plain flour plus extra for dusting
  • 125 g cold unsalted butter
  • 800 g butternut squash or mixed mushrooms
  • 1 onion
  • 4 cloves of garlic
  • 6 large free-range eggs
  • 100 ml single cream
  • 100 g Cheddar cheese
  • 50 g crumbly goat's cheese
  • 2 sprigs of thyme
Instructions:
  • For easier preparation, combine flour, butter, and a pinch of sea salt in a food processor. Pulse for 15 seconds until mixture looks like breadcrumbs. Add 4 tablespoons of water and pulse until it comes together. Transfer to a floured work surface, shape into a round without kneading, then chill in the fridge for 30 minutes. Next, preheat the oven to 180°C/350°F. Grease a 25cm diameter, 4cm deep tart tin. Roll out the pastry on a floured surface until it's just under ½cm thick. Line the tin with the pastry, prick the base with a fork, and bake blind for 30 minutes until golden. Cool, trim excess pastry, and store airtight. Prepare your vegetables and sauté with onion and garlic in olive oil until soft. Blend with eggs, cream, and Cheddar, refrigerate overnight. On the day, preheat the oven. Fill the pastry case with the vegetable mixture, sprinkle with goat's cheese, top with thyme, and bake for 40 minutes. Cool before serving.
