Quick fish cakes

Delicious and fast fishcakes. Perfect for any meal, pair with your favorite veggies for a well-rounded dish.
Ingredients:
  • 500 g skinless cod, haddock or pollock fillets, from sustainable sources
  • 1 large Maris Piper (250g)
  • 4 tablespoons plain flour
  • 2 tablespoons mixed fresh green herbs, such as dill, chives or parsley
  • 200 ml mayonnaise made using free-range eggs
Instructions:
  • Roughly chop the fish, grate the potato, and combine with flour in a bowl. Season with sea salt and black pepper, then shape into 12 flat patties and chill in the fridge. Heat oil in a pan over medium-high heat. Cook the fish cakes in batches for 2 to 3 minutes each side until golden and crisp. Drain on kitchen paper. Mix chopped herbs into mayo. Serve fish cakes with herb mayo, watercress, and lemon wedges. Enjoy!
