Easy and delicious holiday fruitcake made with candied fruit, condensed milk, and walnuts for quick baking.
Ingredients:
  • butter
  • 2.5 cups sifted all-purpose flour
  • 1 (28 ounce) jar prepared mincemeat pie filling
  • 2 cups candied mixed fruit
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup chopped walnuts
  • 2 eggs, lightly beaten
Instructions:
  • Preheat the oven to 300 degrees F (150 degrees C). Grease two 9x4-inch pans with butter and line them with parchment paper, then grease the parchment paper.
  • Sift the flour and baking soda together in a medium bowl.
  • In a spacious bowl, mix together mincemeat, fruit, condensed milk, nuts, and beaten eggs. Gently fold in the flour mixture until thoroughly incorporated, then transfer the mixture into the prepared pans.
  • Bake in the preheated oven for about 2 hours, until the centers spring back and the tops are golden brown. Let the cakes cool in the pans, then invert onto a wire rack and peel off the parchment paper.
