Enhance your Korean BBQ with zesty pickled cabbage.
Ingredients:
  • 1/2 Chinese cabbage (wombok)
  • 2 cloves garlic, finely chopped
  • 5.00 gm caster sugar
  • 40g coarse chilli powder (see note)
  • 61.00 gm fish sauce
  • 1/2 large nashi pear, peeled, cored, cut into julienne (matchsticks)
  • 4 spring onions, trimmed, cut into 5cm lengths, white part halved lengthwise
  • 20.00 ml sesame oil
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Remove the core from the cabbage and tear the leaves into small pieces in a large bowl. Sprinkle with 1 teaspoon of salt, mix well, and let sit for 5 minutes.
  • Combine garlic, sugar, chili powder, and fish sauce in a small bowl, stirring until a paste forms.
  • Combine pear, onions, sesame oil, sesame seeds, and chili paste with cabbage. Massage the chili paste into the mixture using your hands until fully incorporated.
