10-Minute Lemon Harissa Salad: Quick, Healthy, and Delicious for Only $7.85 per Serving!
Ingredients:
  • 250g packet cauliflower rice
  • 250g packet microwave Uncle Ben’s Indian Style Spiced Rice
  • 187.50 ml fresh continental parsley leaves
  • 2 green shallots
  • 50g (1/2 cup) natural flaked almonds
  • 125.00 ml fresh dill
  • 2 x 150g packet hot smoked salmon
  • 1 lemon
  • 45g (1/4 cup) pomegranate arils
  • 42.00 gm fresh lemon juice
  • 28.60 gm honey
  • 1 tsp harissa paste
Instructions:
  • Cook the cauliflower in the microwave according to the instructions on the packet.
  • Combine all the dressing ingredients in a small bowl while the cauliflower is cooking.
  • Place the cauliflower in a large bowl and then prepare the spiced rice according to the packet instructions. Allow it to cool slightly before using.
  • Chop the parsley coarsely and slice the shallots thinly while you wait.
  • Combine rice with cauliflower, tossing until mixed. Add parsley, shallot, almonds, and dill; toss until evenly combined. Transfer the cauliflower mixture to a serving board or platter, then top with flaked salmon. Drizzle dressing over the dish and finish by finely grating lemon rind over the top and scattering pomegranate seeds before serving.
