Quince-glazed chicken

Try our simple and comforting winter dish: quince-glazed chicken.
Ingredients:
  • 4 chicken marylands, trimmed
  • 1 red onion, halved, cut into wedges
  • 18.20 gm olive oil
  • 20.00 ml sherry or apple cider vinegar
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 5 small fresh rosemary sprigs
  • 100g quince paste (see notes)
Instructions:
  • Preheat the oven to 180C/160C fan forced. Place chicken and onion in a baking dish, then season and drizzle with olive oil before baking for 20 minutes.
  • In a saucepan over medium heat, combine quince paste, vinegar, and 1/4 cup of chicken stock. Cook and stir frequently for 10 minutes until the quince paste dissolves. Stir until smooth.
  • Brush half of the sweet quince mixture over the chicken, then combine the rest with the remaining stock and pour around the chicken. Sprinkle with fresh rosemary and roast, basting occasionally, for 30 minutes until the chicken is golden and fully cooked.
