Revamp a traditional Spanish dish with a modern touch - just add quinoa!
Ingredients:
  • 300g broad bean
  • 4 Italian Pork Sausages
  • 9.20 gm olive oil
  • 1 red capsicum, seeded, finely chopped
  • 5.00 gm sweet paprika
  • 1/2 tsp ground turmeric
  • 2 ripe tomatoes, finely chopped
  • 200g quinoa
  • 375ml chicken stock
  • 125.00 ml coriander leaves
  • Lemon wedges, to serve
Instructions:
  • Boil broad beans in a large saucepan for 5 minutes until tender. Quickly cool in cold water, then drain and peel.
  • Heat a large frying pan over medium heat until sizzling hot. Add the sausages and cook, turning occasionally, for 6 mins until beautifully browned and fully cooked. Transfer to a plate to cool slightly, then slice them thickly on a diagonal.
  • In the same pan, heat the oil over medium-high heat. Add the onion and capsicum, cook for 5 mins until onion softens, then stir in paprika and turmeric for 1 min until fragrant. Next, add the tomato and cook for an additional minute. Mix in the quinoa, pour over the stock, and bring to a boil. Reduce heat, cover, and let it cook for 15 mins until liquid is absorbed. Finally, add sausage and broad beans, toss to combine, and let rest covered for 5 mins. Serve with coriander and lemon.
