"Spicy ground chicken and quinoa dish made quick and easy with diced tomatoes and green chile peppers for a flavorful dinner."
Ingredients:
  • 2 cups chicken broth
  • 1 cup quinoa
  • 2 teaspoons vegetable oil, or as needed
  • 0.5 onion, chopped
  • 2 cloves garlic, or to taste, minced
  • 1.5 pounds ground chicken
  • 1.5 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
Instructions:
  • Prepare all your ingredients.
  • In a saucepan, bring the chicken broth and quinoa to a boil. Cover, lower the heat to medium-low, and simmer for 15 to 20 minutes until the quinoa is tender and has absorbed the liquid.
  • Heat vegetable oil in a large skillet until shimmering. Sauté onion and garlic until onion is translucent, for about 5 minutes. Add ground chicken and cook until browned and crumbly, for 5 to 7 minutes.
  • Combine the cooked quinoa and diced tomatoes with the chicken mixture. Bring to a gentle simmer and let it cook for about 10 minutes to allow the flavors to blend perfectly.
