Savory quinoa pilaf with onions, carrots, and walnuts, perfect with salad and crusty bread.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 cup chopped onion
  • 2 carrots, chopped
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 0.75 cup chopped walnuts
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a saucepan over medium-high heat, sauté onions in oil until translucent. Add carrots and cook for 3 more minutes. Mix in quinoa and vegetable broth, bring to a boil, then simmer covered for 15-20 minutes until quinoa is tender.
  • Combine the quinoa, walnuts, and parsley in a bowl for a delightful dish that can be enjoyed warm or at room temperature.
