Try a flavorful salmon and quinoa salad with a tasty miso dressing for a simple and delicious weeknight dinner.
Ingredients:
  • 200g quinoa
  • 1 bunch broccolini, ends trimmed
  • 300g snow peas, thinly sliced lengthways
  • 1 carrot, peeled, cut into matchsticks
  • 4 skin-on salmon fillets
  • 40.00 ml rice wine vinegar
  • 24.00 gm miso paste
  • 21.00 gm salt-reduced soy sauce
  • 10.00 gm caster sugar
  • 2 tsp sesame oil
Instructions:
  • Prepare the quinoa in a saucepan according to the package instructions.
  • Cook the broccolini and snow peas in salted boiling water until tender. Drain well and combine with carrot in a large bowl.
  • Pan-sear the salmon in a large skillet over medium-high heat for 3 minutes on each side for medium doneness or until cooked to your preference. Place the salmon on a plate and tent with foil. Let it rest for 5 minutes before serving.
  • In a small bowl, combine the vinegar, miso paste, soy sauce, sugar, and oil. Serve the quinoa on plates, topped with the salmon and broccolini mixture. Drizzle the miso mixture over the dish before serving.
