Spiced pork tenderloin filled with quinoa, apple, onion, and raisin stuffing, roasted to perfection - a stunning main course.
Ingredients:
  • 0.25 cup uncooked quinoa
  • 0.5 cup water
  • 2 tablespoons olive oil
  • 0.5 onion, chopped
  • 2 cloves garlic, chopped
  • 1 small apples - peeled, cored and chopped
  • 0.25 cup raisins
  • 2 tablespoons pine nuts
  • 4 mushrooms, chopped
  • 2 tablespoons white wine
  • 1 (1 pound) pork tenderloin
  • 1 pinch ground cinnamon
  • 1 pinch garam masala, or to taste
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan over medium-high heat, bring the quinoa and water to a boil. Cover, reduce heat to low, and simmer for about 15 minutes until the quinoa is tender and the water is absorbed.
  • In a skillet over medium heat, sauté onion, garlic, apples, raisins, pine nuts, and mushrooms in olive oil until onion is soft and translucent, around 8 minutes. Add white wine and cook until liquid evaporates, about 1 minute. Mix apple mixture with quinoa until combined; set aside.
  • Heat your oven to a toasty 425 degrees F (220 degrees C).
  • Score the pork tenderloin horizontally through the middle, leaving a 1/2 inch intact. Open it like a book and place it between plastic sheets. Pound with a meat mallet until 1/2 inch thick.
  • Sprinkle both sides of the tenderloin with a fragrant mixture of cinnamon, garam masala, salt, and black pepper. Spread the quinoa filling over the seasoned meat, roll it up, and fasten with kitchen twine or toothpicks before placing it on a roasting pan.
  • Roast the pork in the preheated oven until no longer pink in the center, approximately 35 minutes. The filling's temperature should reach 145°F (63°C) when measured with an instant-read thermometer. Rest covered with foil for 10 minutes before slicing.
