Cozy up with a comforting quinoa bowl featuring sweet potatoes, onions, mushrooms, and pecans. Great for chilly days as a hearty meal or side dish.
Ingredients:
  • 0.33333334326744 cup quinoa
  • 1 cup water
  • 1 pinch salt
  • 1 teaspoon minced garlic
  • 1 small sweet onion, chopped
  • 1 cup crimini mushrooms, sliced
  • 1 small sweet potato, peeled and diced
  • 0.25 teaspoon cayenne pepper
  • salt and pepper to taste
  • 0.25 cup chopped, toasted pecans
Instructions:
  • Toast the quinoa in a saucepan over medium heat until fragrant, approximately 5 minutes. Add water and a pinch of salt. Bring to a boil, then lower heat to medium-low, cover, and simmer until quinoa is tender, about 20 minutes.
  • Heat olive oil in a large skillet over medium heat. Cook garlic and onion until onion is translucent, about 5 minutes. Add mushrooms, sweet potatoes, and cayenne pepper. Season with salt and pepper. Cover and cook on medium-low heat until sweet potato is soft, about 20 minutes, stirring occasionally. Add a splash of water if needed. Serve vegetable mixture over quinoa and top with chopped pecans.
