Qumbe: A decadent East African coconut candy with just 4 ingredients - coconut and almond flour for a sweet delight!
Ingredients:
  • 2 cups unsweetened grated coconut
  • 0.5 cup coconut milk
  • 1.3333333730698 cups white sugar
  • 1 cup almond flour
  • 0.25 cup unsweetened grated coconut, or as needed
Instructions:
  • Mix 2 cups of grated coconut with coconut milk until well combined.
  • In a saucepan over medium heat, melt sugar while stirring frequently for about 5 minutes. Remove from heat and mix in coconut mixture and almond flour until well combined. Let it cool until easy to handle.
  • Roll the coconut mixture into small, delectable balls. Next, place 1/4 cup of grated coconut into a bowl and roll the balls in the coconut until fully coated. Refrigerate for a minimum of 15 minutes until beautifully chilled.
