Decadent rabbit and bacon casserole with a hint of chocolate, veggies, and potatoes, topped with savory croutons and fragrant parsley for an elegant touch. Optional but elevates the dish.
Ingredients:
  • 2 (2 pound) rabbits, dressed and deboned, bones reserved
  • 1 tablespoon mirepoix base
  • 0.5 cup all-purpose flour
  • salt and freshly ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 2 carrots, diced
  • 0.5 onion, chopped
  • 1 leek, chopped
  • 1 turnip, diced
  • 2 medium potatoes - peeled and cubed
  • 0.5 pound smoked bacon, cubed
  • 1 tablespoon tomato puree
  • 3 (1 ounce) squares bittersweet chocolate, chopped
  • 2 tablespoons vegetable oil
  • 3 slices white bread
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat your oven to 375°F (190°C). Season rabbit bones with mirepoix base, then place them in a 9x13 inch baking dish. Roast for 30 minutes until golden brown and aromatic.
  • Transfer rabbit bones to a saucepan and cover them with water by about 1 inch. Bring to a boil and simmer over medium-high heat until the liquid is reduced by half, creating a flavorful stock. This will take about 30 minutes, adjusting for pan size.
  • Combine flour, salt, and pepper to create a seasoned coating. Dredge rabbit pieces in the seasoned flour mixture. Heat oil in the baking dish. Brown rabbit pieces over medium-high heat or in the oven until evenly browned on the outside.
  • Take out the rabbit pieces and introduce carrots, onion, leek, turnip, and potatoes to the dish. Add bacon, and a splash more oil if needed. Arrange the rabbit pieces on top of the vegetables. Combine your homemade rabbit stock with tomato puree, and pour the mixture into the baking dish. Cover securely with foil or a lid, then lower the oven temperature to 350°F (175°C).
  • Roast the rabbit casserole for approximately 1 hour, or until the rabbit is fully cooked. Season to taste and optionally stir in the chocolate if desired.
  • In a large skillet over medium-high heat, warm up 2 tablespoons of oil. Remove the crusts from the bread slices and cut them into halves diagonally or cubes. Fry the bread in the oil until it turns a light golden brown.
  • Present the casserole in the pan, generously topped with golden fried bread (or crispy croutons) and a vibrant sprinkle of freshly chopped parsley.
