Creamy broccoli casserole topped with crunchy Ritz crackers, made with a blend of mushroom soup, mayo, onions, and cheese, ready in just one hour for a simple and delicious meal.
Ingredients:
  • 2 large eggs
  • 2 (10 ounce) packages frozen chopped broccoli, thawed
  • 1 cup mayonnaise
  • 1 cup condensed cream of mushroom soup
  • 0.5 cup butter, cut into pieces
  • 0.75 cup crushed buttery round crackers (such as Ritz®)
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a large bowl, vigorously mix eggs with broccoli, onion, mayonnaise, condensed soup, Cheddar cheese, and butter until thoroughly combined. Transfer the mixture to a 2-quart casserole dish and top with crushed crackers.
  • Bake until golden and bubbling in the preheated oven, around 30-40 minutes.
