Rachel's Sugar Plum Spice Jam

Make festive red plum jam with clove and allspice, perfect for gifts or holiday meals.
Ingredients:
  • 10 red plums, pitted and chopped
  • 2 cups chopped fresh pineapple
  • 0.5 cup apple juice
  • 0.5 (12 fluid ounce) can frozen orange juice concentrate
  • 1 lemon, juiced
  • 1.5 teaspoons ground cloves
  • 1 teaspoon ground allspice
  • 1 (1.75 ounce) package powdered fruit pectin
  • 8 cups white sugar
  • 4 drops red food coloring
Instructions:
  • In a large pot over medium-low heat, combine plums, pineapple, apple juice, orange juice concentrate, and lemon juice. Cover and cook for 15 to 20 minutes until plums are soft. Mash plums and pineapple to break them up, keeping small fruit chunks. Add cloves, allspice, pectin, and butter to the fruit mixture. Increase heat to high and boil for 1 minute, stirring constantly. Stir in sugar and continue to cook at a rolling boil for another minute. Remove from heat, blend in red food coloring until evenly colored, and skim off foam before serving.
  • Place 12-ounce canning jars and lids in boiling water for 5 minutes. Fill hot jars with plum jam, leaving a 1/4-inch headspace. Remove air bubbles using a knife or spatula. Clean jar rims with a damp paper towel, then seal with lids and rings.
  • Position a rack in the bottom of a large stockpot and fill halfway with water. Bring to a rolling boil over high heat. Gently lower the jars into the pot using a jar holder, ensuring a 2-inch space separates them. Add additional boiling water if needed to ensure the water level is at least 1 inch above the tops of the jars. Cover the pot, bring back to a full boil, and process for 10 minutes.
  • Remove the jars from the stockpot and place them on a cloth-covered or wooden surface, spaced several inches apart, until they cool. Press the top of each lid with a finger to ensure a tight seal (lid doesn't move). Store in a cool, dark area.
