Creamy tomato soup infused with fresh basil, paired perfectly with homemade French bread.
Ingredients:
  • 1 (28 ounce) can crushed tomatoes
  • 1 (11.5 ounce) can tomato-vegetable juice cocktail
  • 1 (14.5 ounce) can chicken broth
  • 20 fresh basil leaves, cut into thin strips
  • 1 cup heavy cream
  • 0.25 cup butter or margarine
Instructions:
  • In a large saucepan, simmer tomatoes, vegetable juice, and chicken broth until flavors meld for 30 minutes. Stir in fresh basil off heat. Optionally, blend soup for smoother texture. Finish with cream and butter, melting gently. Serve promptly.
