Sauté common ingredients for a flavorful touch in Indian cooking.
Ingredients:
  • 1 tablespoon coriander seeds
  • 1 teaspoon black peppercorns
  • 0.5 teaspoon whole cloves
  • 0.5 teaspoon cardamom seeds (from green or white cardamom pods)
  • 2 bay leaves
  • 2 dried chile de arbol peppers, stemmed
  • 1 (3 inch) cinnamon stick broken into smaller pieces
Instructions:
  • Preheat a small skillet over medium-high heat. In a small heatproof bowl, combine coriander seeds, cumin seeds, peppercorns, cloves, cardamom seeds, bay leaves, dried chiles de arbol, and cinnamon pieces. Add the spice mixture to the hot skillet and toast, shaking occasionally, until fragrant and spices are lightly browned, about 1 to 2 minutes. Quickly transfer the toasted spices back to the bowl.
  • Once cooled, crush the chiles and grind them in a spice grinder (or a coffee grinder or high-powered blender) until they resemble finely ground black pepper. Store the mixture in a sealed container in a cool, dark place for up to 3 months.
