Rainbow Vanilla Cheesecake Cookie Bars

Add stunning rainbow swirl to vanilla cheesecake cookie bars, then let them rest for a few hours to impress guests.
Ingredients:
  • 30 vanilla sandwich cookies (such as Golden Oreos®), crushed
  • 2 (12 ounce) packages cream cheese, softened
  • 1.5 cups white sugar
  • 3 tablespoons sour cream
  • 3 tablespoons all-purpose flour
  • 1.3333333730698 teaspoons vanilla extract
  • 1 drop red gel food coloring, or as needed
  • 1 drop orange gel food coloring, or as needed
  • 1 drop yellow gel food coloring, or as needed
  • 1 drop green gel food coloring, or as needed
  • 1 drop blue gel food coloring, or as needed
  • 1 drop violet gel food coloring, or as needed
Instructions:
  • Preheat the oven to 325°F (165°C) and grease a 9x13-inch baking pan with cooking spray.
  • Create a delicious crust by firmly pressing the crushed cookies into the bottom of the pan.
  • In a bowl, use an electric mixer to blend cream cheese and sugar until creamy. Mix in eggs, sour cream, flour, and vanilla extract until combined. Transfer half of the batter into the crust.
  • Separate the rest of the batter into 6 bowls evenly. Stir in red, orange, yellow, green, blue, and violet food colorings one by one until reaching the desired vibrant hues. randomly dollop the colored batters onto the plain batter and gently swirl them together with a knife for a marbled effect.
  • Bake in the oven until the center gently jiggles, for 40 to 45 minutes. Allow it to cool on the counter for 2 hours, then cover with plastic wrap and refrigerate for at least 4 hours before cutting into 24 squares.
