Transform chicken leftovers into tasty ranch chicken tacos with corn tortillas, shredded chicken, taco toppings, and a zesty sour cream ranch dressing.
Ingredients:
  • 0.5 cup ranch dressing
  • 0.25 cup reduced-fat sour cream
  • 1 (1 ounce) packet taco seasoning mix, divided
  • 1 tablespoon mild chunky salsa
  • 2 cups shredded rotisserie chicken
  • 8 (6 inch) corn tortillas
  • shredded lettuce
  • 1 tomato, chopped
  • 4 green onions, sliced
  • 1 (4 ounce) can sliced black olives
  • 1 avocado - peeled, pitted and diced
  • 1 cup shredded Colby-Monterey Jack cheese
Instructions:
  • Mix together the ranch dressing, sour cream, 1 teaspoon of taco seasoning, and salsa in a small bowl. Chill in the refrigerator until ready to serve.
  • Coat chicken evenly with the remaining taco seasoning. Loosely cover the bowl with wax paper or plastic wrap and microwave for 2 to 3 minutes until heated through.
  • Heat tortillas in a skillet for 1 minute per side to make them soft. Add chicken, lettuce, tomato, green onion, olives, avocado, cheese, and a dollop of ranch dressing.
