Indulge in delicious raspberry coconut slices, a beloved classic treat!
Ingredients:
  • 100g butter, softened
  • 161.25 gm caster sugar
  • 3 eggs
  • 187.50 ml plain flour
  • 75.00 gm self-raising flour
  • 85.80 gm buttermilk
  • 217.80 gm raspberry jam
  • 85.00 gm desiccated coconut
  • 48.75 gm shredded coconut
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 20cm x 30cm lamington pan, then line it with baking paper, leaving a 2cm overhang on all sides.
  • With an electric mixer, whip the butter and 1/2 cup of sugar until fluffy. Incorporate 1 egg and mix well. Sift flours over the butter mixture, then gently stir to combine. Mix in buttermilk. Press the mixture over the bottom of the pan and spread jam over the top.
  • In a bowl, combine the remaining eggs and sugar with a whisk. Mix in the coconuts. Sprinkle the mixture over the jam. Bake for 35 to 40 minutes, or until it turns light golden. Let it cool in the pan, then cut into pieces and serve.
