Delicious and versatile muffin recipe with minimal sugar. Use your favorite fruits like blueberries, raspberries, strawberries, peaches, or cherries. Any plain yogurt works. Enjoy this adaptable treat!
Ingredients:
  • 0.5 cup plain yogurt
  • 3 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 0.5 teaspoon lemon extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon grated lemon zest
  • 1 cup frozen raspberries
  • 2 tablespoons white sugar for decoration
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prep a 12-cup muffin tin by greasing it or using paper liners.
  • Combine yogurt, oil, lemon juice, egg whites, and lemon extract in a large bowl. In a separate bowl, whisk together flour, 3/4 cup sugar, baking powder, salt, and lemon zest. Combine wet and dry ingredients until just mixed. Carefully fold in frozen raspberries. Fill muffin cups evenly with batter. Top with sugar for decoration, if desired.
  • Bake in the preheated oven for 15 to 17 minutes, or until the top bounces back when touched lightly. Let the muffins cool in the tin on a wire rack.
