Wow your guests with a decadent raspberry rose pavlova.
Ingredients:
  • 250g raspberries
  • 110g icing sugar mixture
  • 600ml thickened cream
  • 1 tsp rosewater essence
  • 500g Pavlova
  • 100g Raspberry Flavoured Meringue Kisses
  • 100g rose-flavoured Turkish delight, chopped
  • 40.00 ml coarsely chopped pistachios
Instructions:
  • In a small saucepan, gently cook half of the raspberries and 2 tablespoons of icing sugar over low heat for 8 minutes until the raspberries collapse and the syrup slightly thickens. Strain the mixture through a fine sieve into a heatproof bowl, discard the solids, and let it cool.
  • Using an electric mixer, whip the cream, rosewater essence, and remaining icing sugar in a bowl until stiff peaks form. Mix in two-thirds of the raspberry puree and gently swirl to create a marble effect.
  • Transfer the pavlova to a serving plate, generously spread with the cream mixture, and drizzle with the remaining raspberry puree. Add the meringues, Turkish delight, and remaining raspberries on top, then finish with a sprinkle of pistachios.
