Delightful Swedish pancakes with zesty lingonberry topping - perfect for a speedy breakfast!
Ingredients:
0.25 cuplingonberry jam
0.25 cupmeltedbutter
2cups milk
4eggs
2tablespoons meltedbutter
3teaspoons vanilla extract
1cupall-purpose flour, sifted
2tablespoons white sugar
1dashsalt
Instructions:
Combine lingonberry jam and 1/4 cup melted butter, whisking until well blended to create the topping.
Combine milk, eggs, melted butter, and vanilla extract, then whisk until smooth.
Combine the flour, sugar, and salt in a separate bowl. Gradually add this mixture into the milk mixture while whisking constantly until smooth.
Pour 1/2 cup batter onto a lightly buttered skillet or crepe pan over medium heat. Swirl to spread evenly. Cook until the top is dry, approximately 2 minutes. Flip with a spatula and continue cooking until light golden, about 1 to 2 minutes more. Transfer to a plate, spread with topping, and roll up the pancake. Repeat with the rest of the batter and topping.
