Revamp classic tiramisu with chia seeds, prunes, and cacao for a healthier twist.
Ingredients:
  • 150g pitted prunes, roughly chopped
  • 60ml marsala
  • 125ml espresso
  • 40.00 ml raw cacao, plus extra to dust
  • 20.00 ml freshly ground coffee
  • 80ml rice malt syrup
  • 80g chia seeds
  • 8.80 gm vanilla extract
  • 40g cacao nibs
Instructions:
  • Combine prunes with Marsala and espresso, allowing flavors to meld for 3 hours.
  • In a bowl, mix together cacao, ground coffee, 2 tablespoons of rice malt syrup, 1/4 cup (40g) chia seeds, 150ml coconut milk, and 3/4 cup (185ml) warm water until well combined. Transfer the mixture to an airtight container and refrigerate for 3 hours.
  • Combine the vanilla, 1/4 cup (40g) chia seeds, 2 tablespoons of rice malt syrup, and 250ml of coconut milk in a separate bowl. Mix well and then transfer to an airtight container. Chill in the refrigerator for 3 hours. Enjoy!
  • For serving, gently mix the vanilla and chocolate chia mousses to soften them. Divide the prunes among 4 serving glasses. Layer with half of the vanilla chia mousse, followed by the chocolate chia mousse, and finish with the remaining vanilla chia mousse. Sprinkle with extra cacao powder and cacao nibs for added flavor and texture.
